Ingredients:
1/2 Banana (Mashed)
2 Tbsp. Chia Seeds
1/2 Cup Oat Flour
1/4 Cup Rye flour
1 Tsp. Baking Powder
1/2 Milk of your choice (I used rice milk)
2 Tbsp. Yoghurt of your choice (I used soy yoghurt)
1 Egg
N.B Add a dash of water if the batter becomes too thick
Toppings: (my favourite part)
In my version I caramelized some bananas with honey, tiny bit of water and cinnamon. I had also a bit of homemade honeycomb leftover from my sisters birthday cake so I decided for the sake of aesthetics I would use it as garnish. I also drizzled some tahini (my new found favourite condiment) and just watch is dribble down the side of my engineered stack of pancakes.
Tahini, for those of you who might not be familiar with it has a quite runny consistency but the mouth-feel is very similar to peanut butter. I definitely cannot have a stack of pancakes without having either one of these spreads. Tahini is commonly used in salad dressings and so can be thought to be rather savoury but surprisingly it goes well with sweet things as well. The added crunch from the honeycomb and the caramelized bananas adds another dimension of sweetness to the pancakes. I decided not to add any refined sugar to the pancakes and let all the textures and sweetness of the toppings speak for themselves.
