Banana Chia Seed Pancakes

Today I was feeling in the mood for some pancakes, but not a stack slathered in butter and maple syrup something a little more on the healthy side. I had just found chia seeds on sale at my local Whole Foods and I swiped it up without hesitation. They really help to thicken up the batter without the need for extra flour.  I had never used it before but decided to search up a few recipes on pinterest and tada! I found these banana chia seed pancakes. They were surprisingly more fluffy and light than I had initially thought. I was used to making vegan pancakes therefore usually omitting the egg. I feel like the egg really helps to lighten the batter. They were also surprisingly soft and similar in text to american buttermilk pancakes. I kind of just skimmed the recipe for the main ingredients but basically this recipe is one of my originals.  Hope you guys like it!







Ingredients: 
1/2 Banana (Mashed) 
2 Tbsp. Chia Seeds
1/2 Cup Oat Flour
1/4 Cup Rye flour
1 Tsp. Baking Powder
1/2 Milk of your choice (I used rice milk) 
2 Tbsp. Yoghurt of your choice (I used soy yoghurt)
1 Egg
N.B Add a dash of water if the batter becomes too thick 

Toppings: (my favourite part) 
In my version I caramelized some bananas with honey, tiny bit of water and cinnamon. I had also a bit of homemade honeycomb leftover from my sisters birthday cake so I decided for the sake of aesthetics I would use it as garnish. I also drizzled some tahini (my new found favourite condiment) and just watch is dribble down the side of my engineered stack of pancakes.

Tahini, for those of you who might not be familiar with it has a quite runny consistency but the mouth-feel is very similar to peanut butter. I definitely cannot have a stack of pancakes without having either one of these spreads. Tahini is commonly used in salad dressings and so can be thought to be rather savoury but surprisingly it goes well with sweet things as well. The added crunch from the honeycomb and the caramelized bananas adds another dimension of sweetness to the pancakes. I decided not to add any refined sugar to the pancakes and let all the textures and sweetness of the toppings speak for themselves.
